When the family opened the production bakery in Elk Grove Village, the question everyone asked was whether the pączki would still taste the same. It is a fair worry. Plenty of bakeries scale up by switching to a mix, and you can taste it in the first bite.
We did the opposite. The new facility gave us more fryers, more proofing space and more hands, but the dough is still made from scratch with real milk, eggs, yolks and butter, and the fillings still go in by hand on the morning they are sold.
The only thing that changed is how many trays we can send out before the doors open.
