Konfitura z płatków róży, wild rose petal jam, is the filling most Polish grandmothers would name first if you asked them what belongs inside a pączek. It is also the one that almost never makes it onto an American bakery tray, because the jam is slow to make and the flavour divides people.
We are frying it again this season in small daily runs. If you have never had one, it is worth the detour: floral, delicate and completely unlike the fruit fillings next to it.
Available in store while the jam lasts, and by special order for larger boxes.
